Highly recommended favorites include Wild Caught King Salmon di Parma (wrapped in sage and prosciutto and served over caramelized pears and topped by a beurre blanc sauce), the Filet Mignon (cooked in a cabernet mushroom sauce), the signature Colorado Rack of Lamb and the Seared Muscovy Duck Breast with Orange and Lime Hoisin Sauce.
