Wolfgang Puck didn't know he was starting a revolution when he opened Spago Las Vegas in the Forum Shops at Caesars Palace in 1992. Before Puck's world famous restaurant opened on The Strip, Sin City was known only for cheap buffets and even cheaper steakhouses, but now it's become one of the great foodie cities of the world as the celebrity chef and fine dining trend continues to explode... and it all started with Puck's visionary restaurant.
The world famous eatery has managed to stay vital and relevant despite the endless competition it created through Puck's original vision and executive chef Eric Klein's continuing innovations and ever evolving menu. Deceptively simple dishes are made from the absolute freshest ingredients and most premium prime cuts of meat available. All of the food is beautifully presented, in restaurant space that remains one of the most elegant and modern in Sin City.
The menu changes constantly, but the fine American cuisine with international twists includes appetizers like Alsatian wood fired pizzas (topped with pancetta, onions and gruyere), lobster pea soup (with preserved lemons and marjoram cream), and a signature roasted beet and goat cheese Napoleon.
Unique entrees include hand-made Agnolotti, a ravioli-like pasta stuffed with sweet corn and aged pecorino Toscano. The John Dory is a rare American white fish, pan roasted to flaky-sweet perfection and served with cauliflower puree, raisins, and pine nut caper butter sauce. The red wine-braised short ribs are amazing, served with ricotta gnocchi, pork wienerschnitzel, warm potato salad, and baby m‚che salad. The herb-fed spring rack of lamb comes is out of this world and served with garlic haricot verts and a cherry tomato confit.
If you're looking for beef, then you've come to the right place. Their U.S.D.A. Prime cuts are without equal, including Nebraska corn-fed cote de bouef, Illinois tenderloin and Wisconsin milk-fed veal porterhouse, all of which are seared on cast iron then cooked over mesquite charcoal and served with bordelaise sauce, creamed spinach and tasty confit fingerlings.
Don't even think about skipping dessert, because the world famous eatery features an amazing selection of delicious options, including their sinfully rich, piping hot chocolate cake with served espresso ice cream and vanilla bean profiteroles with chocolate sauce.
