Celebrity chef Rick Moonen's RM Seafood at Mandalay Bay is a hip and modern twist on the seafood restaurant with an emphasis on fresh and inventive dishes and sustainability.
The restaurant features two separate sections: an elegant upstairs area with refined dark woods, white linens and glass and chrome accents, while the downstairs is a more casual dining experience designed to look a cruise ship.
Moonen is obsessed with the idea of sustainability and tries to educate people that if we don't slow down on our consumption, popular fish like salmon and tuna will be extinct within a few decades. While many common fish are on the menu, Moonen also presents rare and unique seafood options like Wreckfish and Sea Urchin in order to take some of the pressure off the more well known fish.
The casual downstairs section is equally creative, with a famous RM Sushi Bar, raw bar and great selection of entrees like Arctic char, lobster Bolognese or Alaskan Halibut. Before you eat, enjoy a cocktail in the downstairs section's classy lounge area.
