Casa Nicola
Casa Nicola at The Hilton was one of the first authentic Italian restaurants in Las Vegas, and it's been satisfying hungry diners for decades. Formerly known as Adiamo, this restaurant has remained a beloved Vegas staple as trendy restaurants run by celebrity chefs have opened and closed over the years.
According to legend, the restaurant was a favorite hang for Frank Sinatra and The Rat Pack... a ringing endorsement for an Italian eatery if there ever was one. The place has remained relevant since Ol' Blue Eyes heyday by continuing to offer traditional Italian fare while adding new innovations and healthier Mediterranean dishes.
The menu is still written entirely in Italian, where you can find amazing listings of rare Italian wines, cheeses and olive oils. Many ingredients are flown in fresh every day to create succulent specialties created by Chef Ray Sansota, including hearth baked breads, homemade pastas, fresh seafood, tender veal and many other traditional Italian dishes.
They're also known for their amazing desserts, which you can peruse in their open display case. You'll have a hard time choosing from their options, which include rich gelato, inventive pastries, tiramisu, tartuffo and house specialties like Mascarpone Burnt Cream (their version of crËme brulee) and a chocolate gondola filled with white espresso gelato.
The restaurant is also known for its massive, open exhibition kitchen, where you can watch the chefs at work as they busily prepare your meal. It's truly impressive to see the kitchen staff at work.
The restaurant has still got it after all these years. An old Vegas staple of the Rat Pack era, it's survived in an ever-changing landscape by sticking to its guns and serving delicious and continuing to do what it's done well for decades.
